Recipe: My Favorite Chicken Salad


INGREDIENTS

4 Chicken breast or 1 whole chicken

Water

1 c. Seedless red grapes, halved

1 Can mandarin oranges

1 Small can crushed pineapple

1 Red apple, cut up

1/2 c. Slivered almonds

1/4 c. Poppy seed or kiwi dressing

PROCEDURE

1. Remove entrails from chicken. Place chicken in a large pot and add enough water to cover it. Bring chicken to a boil, reduce temperature to simmer, and cook to an internal temperature of 165 F.

2. Remove chicken and place it in a panto cool.

3. Mix celery, grapes, mandarin oranges, pineapple, apple, and almonds together in a mixing bowl.

4. Debone chicken (if using whole chicken). Cut cooked chicken into bite-size pieces. Mix chicken with fruit mixture.

5. Mix mayonnaise dressing in a separate bowl. pour dressing over chicken mixture and mix well. Refrigerate until service.
